BBQ Chicken Dutch Oven

Ingredients 

  • pounds boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 small yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup smoky spicy BBQ sauce (choose your favorite)
  • ½ cup chicken broth

Instructions

  • Preheat the oven to 375°F.
  • Pat the chicken breasts dry and season with salt and black pepper.
  • Heat the olive oil in a Dutch oven over medium heat. Add the sliced onion and sauté for 4–5 minutes, until softened.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Remove from heat. Place the chicken breasts on the onions and garlic.
  • In a small bowl, whisk together the BBQ sauce and chicken broth, then pour it over the chicken to coat evenly.
  • Cover with the lid and bake for 30–35 minutes, or until the chicken is cooked through (internal temp: 165°F).
  • For thicker sauce and caramelized top, remove the lid and bake uncovered for the last 5–10 minutes.
  • Let rest for 5 minutes before serving.
